The 30cm Black Series is the same pan you already know — one piece of forged ST12 carbon steel, 3mm thick, nitrided and ready to cook the day it lands. What's new is the room. About 28% more cooking surface than the 26cm, walls a third deeper at 5.7cm / 2.2 in, and around 3 litres / 3.2 US quarts of capacity — close to double. Less splatter. A lot more food.

Every pan in this batch is stamped FIRST EDITION 2026 on the base. There will be more 30cm Yahgans. There will only ever be one First Edition.

Yahgan 30cm Hardened Glass Lid
Tempered glass with a steam vent and a stainless steel rim and handle, built for this pan. Turns it into a braiser, a steamer, and an oven-to-table dish. Oven safe to 180°C / 356°F.

Yahgan Leather Handle Sleeve
Natural leather, shaped to the Yahgan handle. This one is about comfort more than heat — the handle is designed to shed heat on its own, and the pan works perfectly well without it. What the leather adds is a softer, grippier hold, and you notice it most when the pan is loaded and you're pressing down to lift. Fits the 26cm pan too. Not oven safe — slide it off before the pan goes in the oven or over a fire.

It flips, turns, stirs and serves, and the edge cuts softer food straight in the pan. Precise enough to get under an egg without tearing it. Before you order — two things to check

It's 55cm / 21.7 in end to end and 10cm / 3.9 in tall at the handle, so it fits a standard 60cm / 24 in oven comfortably. If yours is smaller, measure the inside first.

And it's a substantial pan — 2.5kg / 5.5 lbs empty. We won't pretend that's light. Coming from non-stick it will feel like a lot, and we'd rather say so now than have it surprise you.

Frequently Asked Questions

When will my pre-order actually arrive?

Production and SGS lab testing finish mid-October, and the shipment should land in Sydney at the end of November. Australian orders go out first, so before Christmas is likely. For the rest of the world it's possible, but customs and carriers add delays we don't control, and we'd rather be honest than promise a date we can't hold. We'll email you as the shipment moves, not just when it ships. And if yours won't make it in time, we'll send a printable First Edition card so there's something under the tree.

What does shipping cost, and what about duties?

Shipping is free to Australia, New Zealand, the United States, Canada, the UK and Europe. For the US, we cover the tariffs — that cost sits with us, not you. For Europe and the UK we can't cover VAT and import duties yet, so those are still charged on arrival by your carrier. We're working on it.

Can I order other things at the same time?

You can — but everything in that order ships together when the 30cm pans land, including anything we have in stock today. It's one delivery, not two. So if you want an in-stock item sooner, put it through as a separate order and it'll go out straight away.

Can I change my mind?

Any time before your order leaves our warehouse. Email us and we refund you immediately — no questions, no forms, no hard feelings. You're trusting us with money for something that doesn't exist yet, and that trust should cost you nothing to withdraw.

How does the 15% work?

The first 200 pre-orders get 15% off, applied at checkout. It runs out at 200 orders, not on a date — so once it's gone, it's gone.

Can I buy the pan on its own?

Not during the pre-order — this bundle is the only option for now. The 30cm pan, lid and accessories will be available separately once stock lands.

Should I get the 30cm or the 26cm?

If you cook most nights for a family or a full table, the 30cm. If you mostly cook for one or two — eggs, a couple of chops, a quick stir-fry — the 26cm is the honest answer. Plenty of people end up with both, because they genuinely do different jobs, and you can add a 26cm to this order below.

How much bigger is it than the 26cm, really?

It gains on both axes. The flat cooking surface goes from 22.5cm across to 25.5cm — about 398 cm² to 511 cm², so roughly 28% more room. And it's a third deeper: 5.7cm / 2.2 in of wall against the 26cm's 4.3cm. Put those together and capacity goes from around 1.7 litres to around 3 — close to double. In practice that's the difference between cooking dinner in two batches and cooking it in one.

Is it good for everyday weeknight cooking?

That's most of what it does. Thin pans lose their heat the moment cold food lands in them, then overshoot when you turn the dial up to compensate — you spend the whole cook chasing the temperature. 3mm of steel doesn't do that. It holds where you set it, so food browns instead of stewing and you're not standing over it adjusting. Put the lid on and it steams vegetables, finishes a braise, or brings last night's dinner back to temperature gently, without drying it out. It's the pan that lives on the stovetop, not the one you get out for special occasions.

Will it fit in my oven?

It's 55cm / 21.7 in end to end and 10cm / 3.9 in tall at the handle, and it fits a standard 60cm / 24 in oven comfortably. Smaller ovens are worth measuring first — measure the internal width, not the door, and check you have the height clearance on the rack.

Is it too heavy?

It's 2.5kg / 5.5 lbs empty, and we won't pretend that's light. But the weight is doing a job — mass is what holds temperature when cold food hits the pan, and that stability is where both the sear and the steady simmer come from. Next to a 30cm / 12 in cast iron skillet it's still around 30% lighter. If you're coming from non-stick it will feel substantial. The helper handle at the front is there so a loaded pan lifts comfortably with two hands.

Do I need the leather sleeve?

No, and we'd rather be straight about that. The handle is shaped to shed heat on its own, so this isn't a fix for a handle that gets too hot. The sleeve is there for comfort — it softens a steel handle and gives you more grip, which you feel most when the pan is loaded and you're pressing down to lift it off the stove. It slides on and off, fits the 26cm as well, and it's 100% natural leather, so take it off before the pan goes in the oven or over a fire.

Does it need seasoning?

No — it arrives lightly pre-seasoned and ready to cook from day one, and the seasoning continues to build naturally with every use. The nitrided surface means it won't rust even if the seasoning is incomplete.

What heat level should I use?

Low to medium. Carbon steel conducts heat efficiently — you don't need high heat to get excellent results. Let the pan preheat gently, add oil once it's warm, and let it come up to temperature before adding food. The 3mm thickness holds that heat steadily once it's there, which is why low and slow works so well on this pan.

How do I clean it?

Leave it soaking for about ten minutes after cooking, then wash with warm water and the brush from the Care Kit — soap is fine. Dry with a tea towel and put it away. No need to heat dry and oil coat after every use like traditional carbon steel or wrought iron. For stubborn residue, the chainmail scrubber removes stuck bits without stripping the seasoning.

Can I use it over a campfire or open flame?

Absolutely. One-piece forged construction means no rivets, no welds — nothing that direct flame can compromise. Take it camping, use it over a wood fire, or put it in a pizza oven. Leave the lid at home for campfire use — the 180°C limit applies to conventional ovens too — and take the leather sleeve off before the pan goes anywhere near flame.

Can I use metal utensils?

Yes. There's no coating to damage. Metal utensils are fine, and the surface only improves with use.

What does "First Edition" mean?

This is the first production run of the 30cm — 1,000 pans, each stamped FIRST EDITION 2026 on the base. There will be more 30cm Yahgans made. There will only ever be one First Edition.

Is it compatible with induction cooktops?

Yes — carbon steel is naturally induction compatible. Works on all stovetop types: induction, gas, electric, and ceramic.

Where is it made?

Yahgan is an Australian family owned business. Our products are designed in Sydney by Australian designers and manufactured in Hebei, China, by a factory producing premium cookware for European, American, and Australian brands. Every batch is independently tested by SGS Labs for heavy metals leaching before leaving the factory, so we know our iron is clean and safe.
