What an amazing pan (got the black one)! It has risen to my most beloved one and I can tell you I have quite a lot from all over the world. Just finished to render some bacon (no fat added before) no sticking whatsoever. The rendered fat was used to caramelize some onions, four mixed eggs on top and created a somehow "modified" french omelett. All in all stunning performance of MY Yahgan. I seasoned it with beeswax/oil mix once. Keep up your fantastic work and development of such good pieces of carbon steel. Greetings from the other side of the world (Austria)
I had a Victoria Cast Iron Pan (12 in) and a Lodge (10 in) before this one. The handle is massive on the Yangan which is very good. I find it much more comfortable holding it towards the middle of the handle. At the very edge of the handle like shown in the video honestly it feels much heavier because you are making such a large lever arm. Torque is kind of working against you when you hold it that far out. It is about 1.5 lbs lighter than the same size cast iron pan but holding it on the very edge doesn't make it feel that way. That was my experience at least. However, since it is such a large handle anyone can find the spot on it that is the most comfortable for them.
Other than that, I like Carbon Steel much better than cast iron because both my cast iron pans seemed harder to get them to be non stick. The Yahgan pan out of the box was easier to work with. I'm not sure if it is due to the faster heating of carbon steel or it being much smoother out of the box. Great pan overall. Once the 12 inch size comes out I will definitely get a Nitrided version. Soon I may even buy the nitrided version as a gift for family. I may know how to take care of raw carbon steel slash cast iron. That doesn't mean everyone in my family does. Nitrided carbon steel seems much more forgiving to beginners.
Side note the bag that comes with the pan seems high quality so it could be used for more than just storage. Cool add on if you ask me.
Beautiful, solid pan. Cooks amazingly super easy to maintain, and love using it. Definitely recommend it. I am buy a bigger and a smaller Yahgan when available!!!
Great pan used it to cook a steak yesterday and no sticking at all after an initial seasoning.
Will surely become a standard used pan in the kitchen.
