What makes the Black Series different from other carbon steel pans?
The Yahgan Black Series is the only pan in the world that combines one-piece forged construction, 3mm thickness, and a nitrided surface. Most carbon steel pans are thinner, assembled with rivets, and left untreated. The nitriding process hardens the surface at a molecular level — it's not a coating, it's a transformation of the steel itself. The result is a pan that's rust-resistant, more durable, and lower maintenance than standard carbon steel, without any of the health concerns that come with non-stick coatings.
Does it need seasoning?
It arrives lightly pre-seasoned and is ready to cook from day one. The seasoning continues to build naturally with every use. Unlike raw carbon steel, the nitrided surface means the pan won't rust even if the seasoning is incomplete — it's far more forgiving than traditional carbon steel.
What heat level should I use?
Low to medium. Carbon steel conducts heat efficiently — you don't need high heat to get excellent results. Preheating on low to medium, adding oil once the pan is warm, and letting it come up to temperature before adding food is all it takes. The 3mm thickness holds that heat steadily once it's there.
What temperature is the lid rated to?
The lid is oven safe to 180°C / 356°F — well within the range of any standard domestic oven for braising, slow cooking, or reheating. The pan itself is rated to 500°C, so for higher-temperature oven work without the lid, the pan handles it without issue.
How do I clean the pan?
After cooking, we recommend to leave the pan soaking for about 10 minutes and wash with warm water and the brush from the Care Kit — soap is fine!. Dry with a tea towel like a normal pan and put away until next time. No need to heat dry and oil coat after every use like traditional carbon steel or wrought iron.
For stubborn residue, the chainmail scrubber from the Care Kit removes stuck bits without stripping the seasoning. The nitrided surface is far more resilient than raw carbon steel, so cleaning is low-stress.
Can I use it over a campfire or open flame?
Absolutely. One-piece forged construction means no rivets, no welds — nothing that direct flame can compromise. Take it camping, use it over a wood fire, or put it in a pizza oven. The pan handles it. Leave the lid at home for campfire use — the 180°C limit applies to conventional ovens too.
Is it compatible with induction cooktops?
Yes — carbon steel is naturally induction compatible. Works on all stovetop types: induction, gas, electric, and ceramic.
